- Prepare 2 lb of Fish chopped into 2 inch pieces (crappie, walleye, blue gill, or other white fish).
- You need 1 of Green bell pepper -diced.
- You need 6 tbsp of Olive oil.
- You need 1 bunch of Green onions chopped (greens only).
- You need 1 cup of Parsley -chopped.
- Prepare 2 medium of tomatoes - chopped.
- It's 2 cup of Fish stock.
- You need 1 cup of Dry white wine.
- It's 1/4 tsp of Dried oregano.
- You need 1/4 tsp of Dried thyme.
- You need 1/4 tsp of Asafetida ground (garlic replacement). Or 2 cloves crushed garlic.
- You need 1 1/2 tsp of Cayenne pepper.
- It's 1 of Salt and pepper.
- You need 3 tbsp of Tomato paste.
Shorty's Fish Soup step by step
- Cut up all vegetables and fish as specified above.
- In a large stock pot, cook diced green pepper in olive oil over medium high heat for 6 minutes. Stir frequently.
- Add parsley and green onions (and garlic if you are using garlic) and cook for 2 minutes.
- Add tomato and tomato paste..
- Reduce heat to medium low.
- Cook for 10 minutes, stirring occasionally.
- Add fish, fish stock, wine, oregano, thyme, Asafetida ground (if using instead of garlic), and cayenne pepper.
- Increase heat to medium high and cook for approx 10 min or until it goes to a boil.
- Add salt and pepper to taste.
